RW Veggie Burger

Ingredients

  • ½ Cup BBQ Corn Chips blitzed in food processor
  • ½ Cup Yellow Corn Chips blitzed in food processor
  • ½ Onion Small Dice
  • ½ Red Bell Pepper Small Diced
  • 2 Garlic Clove Minced
  • ½ Cup Cooked Black Beans
  • ½ Cup Corn Kernels
  • 2 Eggs
  • ½ Bunch Parlsley Chopped
  • 6 Leaves Basil Chopped

This recipe is gluten-free.

Cooking Instructions

  • 1 ½ Cup BBQ Corn Chips blitzed in food processor
    ½ Cup Yellow Corn Chips blitzed in food processor
    Place in mixing Bowl (reserve 1/8 Total Cup of processed chips for finishing burger)
  • 2 ½ Onion Small Dice
    ½ Red Bell Pepper Small Diced
    2 Garlic Clove Minced
    ½ Cup Cooked Black Beans
    ½ Cup Corn Kernels
    Sauté in olive oil until onions translucent, S+P to taste
    Cool and add to mixing bowl
  • 3 2 Eggs
    ½ Bunch Parlsley Chopped
    6 Leaves Basil Chopped
    Fold into mixture, form 3oz patties for burger and set aside
  • 4 Pat down patties with reserved chip crumble for texture
    Pan Fry in Olive Oil 4 Minutes on each side over medium low heat
